Summer to Fall Salad… The Transition is HERE!

I am totally and COMPLETELY regulated by our cosmos! I mean aren’t we all?! You’d be silly if you believe that you have 100% control over your every move… H A H A. *Gulp*

I’m referring about seasonal transitions. The mornings are darker – BOOOOO – the sun is setting in a different part of the sky – makes me yawn at 4:30 pm! – AND, you just may be craving starchier foods and more “harvest” like meals! I know I am!

So… Let’s not resist this beautiful celestial change that is amongst us, because it’s going to happen whether you like it or not! I’m JUST BEIN’ HONEST!!! (All with love of course!).

Let’s transform your “go-to” summer salad in to an indulging and satisfying autumn delight. I am so lucky and grateful to live in the land of fresh produce. Good old California is the mecca of culinary creations stemming up from the soil. Bring on FALL FEASTS!

This past week I had an absolutely amazing “umami” experience –

u·ma·mi – – – o͞oˈmämē/

According to the official Umami Information Center, “umami is a pleasant savory taste imparted by glutamate, a type of amino acid, and ribonucleotides, including inosinate and guanylate, which occur naturally in many foods including meat, fish, vegetables and dairy products.”

In my particular case, the flavor was evoked by vegetables. Here is my secret autumn salad for yours to enjoy. (It’s SO easy!)

The Autumn Salad

INGREDIENTS

  • Lacinato kale – Roughly torn and massaged with fresh lemon juice + pink Himalayan sea salt
  • String beans – Green, purple, white or a mix of all!
  • Arugula
  • Sauerkraut 
  • Red radishes
  • Fennel bulb + fronds
  • Avocado
  • Lemon – Fresh
  • Rosemary
  • Apple Cider Vinegar
  • Turmeric – Ground
  • Black chia seeds (Optional)

DIRECTIONS

  1. Prepare all items by washing and cleaning thoroughly to remove dirt and debris.
  2. Roughly tear and massage kale pieces with fresh lemon juice + pink Himalayan sea salt – You may add an oil of choice, but I choose to use the avocado as my “binder”.
  3. Combine all items in a large bowl. Toss heavily so avocado, juices, and spices are dispersed evenly.
  4. Optional to sprinkle black chia atop.
  5. Spread over a flatbread, cracker or simply enjoy with a fork! OR spork, OR chopsticks… ; ) Whatever, just enjoy it my loves!
